Plazma Torta with Bananas

Why wait until New Year's to make a resolution?  How about that lull after Christmas and before New Year's?  It was time to seize the moment and do something about my weight and my self image.  So I did!  I've turned my love of eating into a passion for baking and cooking.  Simply said:  Instead of eating my way through the day, I cook and bake my way through it.

On today's agenda was to make a very simple cake that I grew up enjoying.  As a young child, I thought butter was butter.  Oh no it wasn't!  Salted butter does NOT work with this recipe.  Double check your butter and make sure it doesn't say 'salted'.  It was my mistake, yet I ate it anyway.

Today, I tweaked the original recipe:  Replaced the 2 egg yolks with 2 bananas, added cinnamon graham crackers and vanilla pudding.  Not sure what roll of the raw egg yolks played, but the bananas give it the right consistency and flavor.

Here's what I did:

250g "PLAZMA KEKS" (you can find these in your local ethnic store.  Such as a Middle Eastern or European deli.  Normally, these are used as teething biscuits, but when they are placed in the food processor and finely processed, it reminds me of a cheesecake crust....Hmmm now there's a thought).


50g Cinnamon graham crackers (about a packet of the individually wrapped graham crackers)
200g Sugar
250g Unsalted butter (softened) (2.25-2.5 sticks)
2 bananas (nicely spotted brown)
250ml orange juice or orangina (used strawberry banana orange juice - 'cause that's what I had)
1 box of instant vanilla pudding
Whipped Cream

1.  Process the plazma keks and graham crackers until fine.
Empty into a large bowl and soak with the orange juice of choice and blend together.
2.  Place sugar and butter into food processor.  Blend until combined.
3.  Add banana.
4.  Place keks and graham cracker mixture back into the processor and pulse until incorporated.
5.  Follow directions on the back of the vanilla pudding.
6.  Spread the keks and graham cracker mixture into a decorative dish - one that's about 2-3" deep.  Fill the bottom with the keks mixture.
7.  Top with Vanilla pudding.
8.  Place in fridge for about 2 hours to chill.
9. Cut individual pieces (4"x4") and top with whipped cream.
10.  ENJOY!



As for the final product - a success!  My 2 year old and 5 year old daughters loved it.  My husband on the other hand....enjoyed it too.  He said it tasted like banana pudding.

*If you would like a more textured bottom layer, leave a few of the plazma and graham crackers out.  Instead, manually crumble/break the plazma and graham crackers into large chunks.  It should give it more texture.
